Nothing like some sunny side up eggs for brunch on a snow filled Wednesday morning NomNomNomNom
Probably my favourite kind of egg… sunny side ups are easy to make and taste great with fresh bread. Today, I decided to have my eggs poached on top of the rye bread slices; sprinkling ground black pepper and Italian herbs for garnish. They’re quick and easy to eat with your hands or if you’re feeling classy, a knife and fork works too lol
As a side, I chose to slice a garlic pickle and also set some roasted red pepper hummus in a bowl to use as a dip. All of the flavours combined were delicious… and definitely satisfying. Eggs are a great source of protein and are an excellent way to provide your body with the necessary nutrients it needs to start your day. Try incorporating eggs into your breakfast in anyway you enjoy most and you’ll notice a huge difference both mentally and physically.
Today was a savoury salad kind of day… woke up in the mood for pickles lol I know, so random! I’ve been trying to get into the habit of eating eggs for breakfast/brunch, but scrambled, omelettes and sunny side up aren’t the only ways to go. I’ve always loved boiled eggs, ever since I was small (I mean young, cuz let’s face it… I haven’t grown much lol) my mom made them for me. And pickles, well let’s just say I could eat an entire jar in one sitting hehe *evil laugh*
This quick and easy mix consists of iceberg lettuce, 2 sliced boiled eggs, 1 sliced large pickle, calorie wise balsamic vinaigrette and a sprinkle of black pepper.
If boiled eggs don’t tickle your fancy, substitute it with tuna or chicken.
Something to keep in mind… this is a simple salad perfect to take with to work as lunch, but if you don’t have the luxury of time in the morning to make boiled eggs, use the leftover chicken from the night before! = )
